It’s that time of year…

To add pumpkin to everything! Fall foods are a big hit in our home. One fall treat idea I was introduced to was by a friend posting she was making pumpkin chocolate chip cookies. What an awesome idea! I immediately looked to make some gluten free pumpkin chocolate chip cookies.

Here is what I came up with…

Pumpkin Chocolate Chip Oatmeal Cookies

  • 1 cup butter, softened
  • 1/2 or 1 cup brown sugar
  • 1 cup sugar
  • 1 cup pumpkin puree
  • 1 egg
  • 1 tsp. vanilla extract
  • 1/2 cup coconut flour or 2 cups regular flour
  • 1 cup oatmeal
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 3/4 or 1 cup semi sweet chocolate chips

Add all ingredients except chocolate chips to your mixer ( I used my Ninja).



Pour batter from mixer into a bowl. Add chocolate chips and stir into batter.


Scoop dough onto cookie sheet. Bake at 350° for 15-20 minutes.


FYI: The coconut flour does not hold together as well as regular flour, so they will break apart easily.
