Stuffed Zucchini

Fall is by far my favorite time of the year. Eating from the garden is not only a money saver, but it tastes better getting things fresh from the garden. Also knowing that all the food I am getting from my garden is non GMO and not treated with any pesticides or toxic products is a plus for me. Yes, gardening does take time and can be frustrating some years, but I do truly like to garden.

Here is one of my recent favorite ways to cook zucchini. Sorry, no measurements on this one. Sometimes you just have to have fun with it and be care free.

Stuffed Zucchini 

Wash and cut zucchini in half.

Scoop out seeds.

Add chicken.

Add tomatoes.

Add jalapeños.

Add chives, basil, fresh garlic and cheese.

Bake at 350° until zucchini is tender…
